Emilio Lavazza Infused High-Tech Innovation With Caffeinated Marketing to Transform his Family’s Coffee Roaster Into a Global Brand

Emilio Lavazza, who died Tuesday at age 78, started out delivering ground coffee door-to-door to restaurants around Turin, Italy, where his grandfather founded the company as a grocery store in 1895.

Lavazza became a national brand in the decades after World War II, and today is Italy’s biggest-selling coffee with almost 50% of the retail market.

But it wasn’t until Mr. Lavazza became CEO of Luigi Lavazza Spa in 1971 that the company began testing foreign markets.

Today, Lavazza espresso is brewed in more than 90 countries; the company says it is the sixth-largest purchaser of green coffee beans in the world.

The company credits Mr. Lavazza with having the idea in 1970 of putting coffee in vacuum-sealed packages for export, a practice since adopted by most producers. At a coffee laboratory in Turin, Lavazza developed coffee capsules for single-shot brewing and other technical innovations in roasting and vending. A Lavazza partnership with Catalan gastronome Ferran Adrià produced such edible novelties as coffee “caviar.”

Lavazza began opening coffee bars and training centers abroad, and in recent years expanded into India and Brazil.

In the 1960s, Mr. Lavazza developed the characters “Carmencita and Caballero,” stars of a beloved Italian television ad campaign. Later, he initiated award-winning ad campaigns featuring celebrities such as the singer Luciano Pavarotti and movie star Nino Manfredi. The company still produces an edgy annual photo calendar shot by the likes of Helmut Newton and Annie Leibovitz.

Mr. Lavazza, who was knighted in 1991 and known in Italy as the “King of Coffee,” was affectionately addressed as “Signor Emilio” by his employees. His death follows that of Ernesto Illy, who for decades ran Trieste-based Illy caffe Spa, two years ago this month. The two men propelled a postwar Italian espresso boom that spread the coffee-making technique to an international audience.

Mr. Lavazza lived all his life in Turin—home to other Italian business dynasties including Fiat’s Agnelli and Nutella’s Ferrero families. Not unlike Mr. Ferrero, Mr. Lavazza shied away from the public eye.

The company is still privately held, and fourth generations of Lavazzas are among the company’s senior management. Mr. Lavazza retired in 2008.

A rabid sports fan, Mr. Lavazza once reportedly turned down the presidency of his local Turin football team. The company was a sponsor of the 1998 World Cup in France.

In a rare 2003 interview with the Italian daily Il Sole 24 Ore, Mr. Lavazza spoke of passions for fishing, jazz, and collecting toy soldiers—so many that storing them became a sore point with his wife. He was also a fan of murder mysteries, and wrote two himself.

Carla Bruni isn’t the only thing Nicolas Sarkozy likes hot and Italian — the French president demanded a special espresso machine when he visited Columbia University.

Organizers of his appearance revealed that the finicky French leader had insisted his choice of espresso machine be provided.

In addition to ensuring that he was properly caffeinated, Sarkozy also flew in a plush rug and distinctive podium for his talk on world affairs.

Dogged by rumors that his marriage is on the rocks, Sarkozy — as pictured here — strolled around the Ivy League campus hand in hand with his model wife, Carla Bruni, as if he didn’t have a care in the world.

The embattled prez — whose approval ratings back home have plummeted to a paltry 32 percent — seemed to relish the warm welcome he received at Columbia, where he spoke to a packed house.

Rather than entering the library rotunda from behind the curtain, as most speakers do, Sarkozy made a grand entrance by climbing up the majestic staircase.

As he addressed the crowd, a demure Bruni nodded to her husband on from the front row.

“The world needs an open America, a generous America, an America that shows the way, an America that listens,” Sarkozy said.

In the speech, which was warmly received by the college crowd, Sarkozy praised President Obama’s efforts to reform health care — and took a dig at the United States for the furor that ensued.

“When we look at the American debate on reforming health care, it’s difficult to believe,” he said, noting that France has long had socialized health care.

After his speech at Columbia, Sarkozy headed to the United Nations.

His wife, an art buff, hit NYU for a tour of the Barney Building, which houses the Department of Art and Art Professions.

Recently, Bruni was alleged to have been stepping out with a European pop star, while Sarkozy, who divorced his second wife, Cécilia — a stunning former model — shortly after becoming president, was linked to a government official.

Both have both strongly denied reports of extramarital affairs.

The power pair is heading today to Washington, DC, for a private dinner with the world stage’s other favorite couple — President and Michelle Obama.

What Effect Does the Grind Setting Have on The Final Result?

The grind setting determines how finely or coarsely the coffee beans are ground. This affects the flow-through time of the water, the so-called extraction time.

If the coffee is coarsely ground the water will flow through more quickly than with the same coffee at a finer grind setting.

A longer extraction time results in more flavors being extracted.

If your coffee isn’t strong enough for your taste, you can select a finer grind setting and therefore extend the extraction time.

On the other hand, if it tastes too strong or too bitter, select a coarser grind.

Capresso offers grinders in all three categories. Conical Burr Grinders preserve the most aroma and can grind very fine and very consistent. The intricate design of the steel burrs allow a high gear reduction to slow down the grinding speed. The slower the speed the less heat is imparted to the ground coffee thus preserving maximum amount of aroma. Because of the wide range of grind settings these grinders are ideal for all kinds of coffee equipment, Espresso, Drip, Percolators, French Press. The better Conical Burr Grinders can also grind extra fine for the preparation of Turkish coffee. Grinding speed is generally below 500 rpm.

Burr Grinders with disk type burrs grind at a considerable faster speed than conical burr grinders and create a bit more warmth in the coffee (10,000 to 20,000 rpm). They are the most economical way of getting a consistent grind in a wide range of applications. They are ideal for Drip, Percolators, French Press and well suited for most pump espresso machines. However they do not grind as fine as Conical Burr Grinders.

Blade Grinders are suitable for drip coffee makers and percolators. They also do a great job for grinding spices and herbs. The blade rotates at very high speed (20,000 to 30,000 rpm) thus creating a bit warmer coffee and a bit of “coffee dust.” That coffee dust can clog up the fine mesh of the metal baskets used in pump espresso machines.

When coffee is freshly ground and freshly brewed many people can tell the difference in taste from burr-ground and blade-ground coffee.

What else to look for in grinders?

Static, noise, safety and ease of cleaning are important factors.

Grinding creates “static cling”. The ground coffee particles fly around and “cling” to surfaces.

Before removing the grounds containers (all burr grinders), tap the container slightly and remove slowly.

Before removing the lid of blade grinders, tap the top of the grinder and remove the lid slowly.

 Some grinders are extremely loud which can be very annoying. The Capresso Conical Burr Grinders (Infinity) and the Capresso Blade Grinders (Cool Grind) are among the least noisy in its class. The Capresso Stainless Steel Burr Grinder / Black Burr Grinder has a specially insulated lid. It is the least noisy grinder in its class.

The iF award is an international honor given by International Forum Design of Hanover, Germany. According to a statement from Jura-Capresso, the Jura brand’s parent company, a panel of design professionals and industry specialists reviewed products from more than 35 countries based on design quality, choice of materials, degree of innovation, environmental impact, functionality, safety and ergonomics. The Impressa Z7 was selected based on its high-quality materials, design, ease of use and versatility, the statement said.
The German Design Award (formally called the Design Award of the Federal Republic of Germany) is bestowed by the German Ministry of Economics. According to the Jura-Capresso statement, only products that have previously won a national or international design award are eligible for this honor. It will be presented in February 2011.
